Gluten Free Crock Pot Chicken Chili - perfect for a snowy cool day! I love to cook and often guesstimate amounts - so, adjust this to however you like!
Items you need:
2-3 chicken breasts - or any other type of chicken - even rotisserie will do
1 onion - slightly sautéed with a little garlic
1 can of black beans - rinsed
1 can of corn - not drained
1 can of tomatoes with chilies
1 package of ranch dressing mix - hidden valley is labeled gluten free
1 8oz package of cream cheese
1 Tablespoon chili powder
1 tsp cumin
1 tsp onion powder
1/4 tsp cayenne - can adjust to heat level desired
1/2 tsp of garlic powder
1/2 tsp of pepper
How to make:
Add chicken to crock pot - add all remaining ingredients and stir. Cook on low 6-8 hours.
Enjoy!!
Other suggestions: serve on top of brown rice topped with avocado; top with tortilla chips; serve on top of crushed up tortilla chips
