This casserole is a quick and easy make ahead meal. Most of the items are probably already in your home. Like most of my recipes, amounts are suggestions - everything can be adjusted to taste and preference.
Ingredients:
1 lb of ground beef
1 onion diced
3 garlic cloves or garlic powder
12 oz tomato sauce
1 1/2 cups cooked rice
1 cup chicken broth
2 cups of cheddar cheese
1 cup sour cream or greek yogurt
1 cup frozen peas and or carrots
salt, pepper, oregano, Italian seasoning
What to do:
1) Preheat the oven to 350 - unless prepping ahead and saving for later.
2) Cook onion in skillet until it starts to soften
3) Add ground beef and onion - cook until no longer pink
4) Season with salt, pepper and any other season you like - i.e. oregano, italian
5) Add rice, tomato sauce, half of the cheese, peas - simmer for 3 minutes
6) Transfer to a casserole dish and bake for 15minutes (if making ahead can stop at this point or can finish and heat up later)
7) While that is baking mix the sour cream or greek yogurt with the remaining cheese
8) After 15minutes top with the cheese mixture (I only covered topped part of it since my daughter is not a fan of the topping)
9) Bake for another 15 minutes
Serve with a side salad and some gluten free bread to soak up the yumminess! Enjoy!
