Ingredients:
2 T olive oil
1 small onion - chopped
1 small red pepper - cut into strips
1 1/2 - 2 lbs chicken - thighs, breasts whatever
2 T taco seasoning
taco shells or tortillas
Toppings: avocado, tomato, cheese
Directions:
1) Heat the oil in a large dutch oven
2) Add the onion and pepper and cook till soft
3) Add the chicken and cover with water and add taco seasoning
4) Cover and let cook until chicken is cooked through - about 20 minutes
5) Remove from heat and using two forks shred the chicken
6) Continue cooking on low until ready to serve
Heat the tortillas or shells, top with chicken mixture and add desired toppings - enjoy!
